There are plenty of things to consider when trying to figure out how much turkey meat to allot for each of your dinner guests. Kids are likely to eat less than grown men, for example. And if you’re preparing a big spread with all sorts of appetizers, sides, and desserts, you can probably get away with a little less meat per guest.

Now, all that being said, you know you’re going to want turkey leftovers as a reward for the time you spent preparing a feast. With that in mind, we recommend allotting 1 to 1.5 pounds of meat per person. So, if you are feeding 8 people, you’ll want a 16 to 20lb turkey.

A meat thermometer is the easiest and most accurate way to determine when your chicken or turkey is ready to eat. It should be cooked until the internal temperature is no lower than 170°F (77°C).  Check the temperature in the inner part of the thigh and wing and the thickest part of the breast.

It all depends on your chosen cooking method, whether you’re stuffing your bird,  and whether it’s fully defrosted when you put it in the oven.  The Turkey Farmers of Canada website is a great resource for new and seasoned turkey cooks. 

When we created our Larkin Farms burger and sausage products, we knew that in addition to being healthy and delicious, they also had to be easy to prepare. That’s why we’ve crafted burgers and sausages that taste equally great cooked on the BBQ, indoor grill, or the stove-top.  Now you look forward to easy, healthy home-cooked meals that everyone will love all year-round.

Defrosting a whole chicken/turkey in the refrigerator is the best, safest, and easiest method, although it takes the most time.  A frozen chicken will take 1 to 2 days to defrost in the refrigerator, while a large turkey could take up to 4 or 5 days! As a general rule of thumb, it takes about 1 day for every 4lbs of turkey!

If you don’t have that kind of time to thaw your chicken/turkey, you can defrost it using the water bath method. With the bird still in its tightly sealed package, submerge it in a sink or bowl filled  with ice cold water. Every 30 minutes, drain the sink and replace with cold water. It should take about 30 minutes per pound to defrost. That’s still a full day of water bathing if you have a 16 pound turkey! Once defrosted, a chicken/turkey that’s been water bathed should be cooked right away.

Generally speaking, we recommend storing frozen whole chickens/turkeys in the freezer for a maximum of one year. Once defrosted, poultry can stay fresh in the refrigerator for up to 7 days.
